Bright citrus segments, bitter greens, toasted pistachios, and ribbons of orange pistachio salami — a fresh, textural salad that tastes like sunshine in the cold months.

Orange Pistachio salami is built on Sicilian flavors — fresh orange zest and toasted pistachios — so it practically tells you what to put it with. We echo both right in the bowl.

Segments of orange and grapefruit bring juice and acidity, bitter greens keep it from feeling sweet, pistachios add crunch, and crumbled ricotta salata pulls it together. The salami brings the savory anchor.

It's light, looks beautiful, and goes with just about anything.

Ingredients

For the Salad

  • 2 oranges

  • 1 grapefruit

  • 4 cups bitter greens (radicchio, frisée, or arugula)

  • 3 oz Orange Pistachio salami, thinly sliced or torn

  • ¼ cup toasted pistachios, roughly chopped

  • 2 oz ricotta salata or feta, crumbled

For the Dressing

  • 3 tablespoons olive oil

  • 1 tablespoon white wine vinegar

  • 1 teaspoon honey

  • salt and pepper

Instructions

  1. Whisk together the olive oil, vinegar, honey, and a pinch of salt and pepper.

  2. Cut the peel and pith from the oranges and grapefruit, then slice into rounds or segments. Work over a bowl to catch the juice and add a splash of it to the dressing.

  3. Toss the bitter greens lightly with about half the dressing and spread them on a platter.

  4. Arrange the citrus over the greens, then drape the orange pistachio salami throughout.

  5. Scatter the pistachios and crumbled ricotta salata over the top.

  6. Drizzle with the remaining dressing and finish with cracked black pepper.

Chef Notes

Supreme the citrus — cut away all the pith and membrane — for the cleanest bite, though simple peeled rounds are fine too.

Dress the greens lightly; the citrus brings plenty of juice, so you don't need much. Toast the pistachios for a few minutes in a dry pan to wake them up.

Substitutions & Tips

Any mix of citrus works — blood oranges, cara cara, or tangerines are all lovely.

Feta or shaved Parmesan can replace the ricotta salata, and Loukanika or Finocchiona are good alternatives to the orange pistachio salami.

Serving & Storage

Best served fresh, right after assembling.

If you need to prep ahead, segment the citrus and make the dressing in advance, then build the salad just before serving so the greens stay crisp.
